Golden Coconut Cake
My friend, Ann, shared a delicious cake recipe made out of coconut yesterday.
So here I am, saving it in my blog for my future reference. Also a way of sharing it with you.
Ingredients
1/4 lb (125 ml) Rama butter
1/2 cup sugar
3 eggs yolk (keep the egg white)
1 teaspoon vanilla
1 cup flour
2 teaspoon Baking powder
1/2 cup milk
Topping
1 cup Desicated Coconut
1/2 cup sugar
3 egg whites
Cake method
Prepare cool oven 160°C. Grease a deep 20 cm tin. Cream the butter and the sugar.
Gradually add the egg yolks & vanilla and beat well. Sift the flour and baking powder. Gently add the sifted dry ingredients to the creamed mixture alternately with the milk. Blend well. Spread into prepared tin.
Topping method
Whisk the egg whites until soft peaks form. Gradually add the sugar, beat till stiff & fold in the coconut, mix gently. Spoon onto the cake dough. Bake for +- 40 to 60 minutes till golden brown.
